Pork Pastrami (Porkstrami) is pork shoulder that has been prepared in the same manner used to make pastrami. But instead of a beef brisket we’ve used a boneless pork butt (shoulder) that was corned for 7 days before being slow smoked to perfection. The results are phenomenal.
