The pork tenderloin, also called pork fillet or Gentleman's Cut, it is very tender, hence the name . It is also very lean, the cut of pork you do not want to overcook. Great for grilling or roasting. One of my favorites! My mother in law's recipe fillet cut the tenderloin, utilizing a tenderizing mallet, hammer it thin, coat it with some well seasoned flour, put into an Eggwash and coat with favorite bread crumbs (mine was Italian style Progresso bread crumbs), pan fry and enjoy with mayo, pickles on your favorite bun!
